The Best Wood for Florida Humidity

Wood moves. It takes on moisture when the air is wet and gives it up when the air is dry, and it changes dimension doing it. That’s not a defect. It’s what wood is.

On the Gulf Coast the swing is wide and it happens every year. Which means species selection here isn’t a taste question. It’s an engineering one.

What humidity actually does

Wood reaches equilibrium with the air around it. In a conditioned Sarasota house that might be 8 to 10% moisture content. In an unconditioned space through a wet summer it can run well past that.

When the number changes, the wood changes with it, and almost entirely across the grain, not along it. A board barely changes length. It changes width.

What that looks like in a finished building:

  • Joints opening. Mitered inside corners on crown and base separate first.
  • Panels cupping. Wide flatsawn boards curl away from the growth rings.
  • Telegraphing. Panel edges reveal an unfinished line as a floating panel shrinks in its frame.
  • Doors and drawers sticking through the wet months, then running loose in the dry ones.

None of that is bad luck. It’s dimensional change nobody planned for.

Species that behave here

Mahogany. The Gulf Coast standard for a reason. Genuine mahogany has one of the lowest shrinkage rates of any commercial hardwood, works cleanly, and finishes beautifully. When something has to stay put, this is the default answer.

Sapele. Related to mahogany, harder, with a ribbon figure when quartersawn. Very stable, and more available than genuine mahogany.

Spanish cedar. Light, stable, naturally resistant to rot and insects. The traditional choice across the tropics for anything near moisture.

Teak. Exceptionally stable and naturally oily. Expensive, and specified where stability is worth paying for.

Cypress. Native to the Southeast and well adapted to it. Worth knowing that new-growth cypress does not carry the rot resistance old-growth did, because the heartwood content isn’t the same. Still a good, stable interior choice.

White oak. Closed cellular structure that resists water penetration, which is why it’s the boat and exterior-door oak. It moves more than mahogany, so it wants quartersawn stock and sound joinery, but it’s a strong, handsome choice.

Walnut. Moderate movement and it takes finish exceptionally well. A reliable interior species for built-ins and furniture.

Species that need more care

Not “bad wood.” Wood that needs to be used correctly.

Hard maple and beech move a lot for their density. Fine for interior cabinetry in conditioned space. Not what you want in a wide flatsawn panel near a moisture source.

Red oak has open pores that wick moisture, which is exactly why white oak, not red, goes on exterior work.

Hickory is hard, tough, and moves considerably. Beautiful, but it has opinions.

MDF and particle core are dimensionally stable in humidity, which is why they show up in paint-grade work. But they fail permanently if they ever meet liquid water. Stable is not the same as waterproof.

Quartersawn is half the answer

Most species move roughly twice as much tangentially as they do radially. In plain terms: a flatsawn board moves about twice as much across its width as a quartersawn board of the same species.

That’s a bigger effect than switching species.

Quartersawn stock costs more and yields less from the log. On wide panels, stile-and-rail work, and anything that has to hold a tight reveal, it earns the difference.

Construction beats species

Species selection matters. How the piece is built matters more.

Acclimate the material. Wood delivered and installed the same week will move afterward. Stock needs time in conditions close to where it will live.

Let panels float. A panel captured in a frame has to be free to expand and contract. Glue it in and it will either crack or split the frame. Space balls, not glue.

Cope inside corners. Coped joints close on themselves as wood moves. Mitered inside corners open, and once open they stay open.

Finish all six sides. Finish slows moisture exchange. Finishing only the show face means the back takes on moisture at a different rate, and the board cups. This is the single most common cause of cupped panels in otherwise good work.

Scarf long runs. Long runs of trim need joints that can move without showing.

Design for movement across the grain. Fasten so the wood can move, and run the movement where it’s hidden.

What this means for a Sarasota job

Ask three questions on any piece: what’s the species, how is it sawn, and is it built to move.

For interior millwork and molding in conditioned space, the range of workable species is wide, and the construction details do most of the work. For architectural woodwork, meaning stairs, beams, built-ins, anything with wide panels or long spans, species and sawing start to matter a lot more. And the finish schedule is part of the moisture strategy, not a separate decision made at the end.
